Beat the sugar and butter until fluffy. Gradually add the eggs and continue beating briefly. Slowly stir cocoa, vanilla sugar and grated lemon peel into the butter mixture. Sift the flour together with the baking powder and blend into the butter mixture. Peel and core the apples, chop well and mix into the pastry. Mix all the ingredients well. Cover an oven tray (30 cm x 40 cm) with baking paper, distribute the pastry evenly and sprinkle with icing sugar. Bake at 200° C in a preheated oven for 35-40 minutes.
Tip: Use plums, apricots or pears in place of apples. The pastry can also be used to make muffins.
