Blend eggs, sugar and salt for three minutes in a food processor.
Meanwhile, peel, core and coarsely chop the apples and drizzle with lemon juice.
Add the milk to the egg mixture. Sieve in the flour and baking powder and incorporate the apples.
Grease a non-stick frying pan (I use a 20 cm pan) and cook approx. 5 tbsps. of batter for 5 minutes on each side, until golden brown.
When cooked through, dust your apple pancakes with icing sugar and serve.
